Easy Healthy Dessert: Berry Blast Popsicles

Berry Blast Popsicles Help Create Easy Healthy Dessert Options

Even if you don’t have a Quicksicle Maker, you can still make super healthy and super tasty frozen popsicles, you just won’t have instant gratification (and you won’t be able to make the cool two-toned flavored pops, like the ones in the photo above.) Here are a few guidelines for making cool, creamy popsicles:
  • Ditch the dairy. If I want a creamy Popsicle I use a plant-based “milk” or “cream” instead of cow’s milk or yogurt. Coconut milk, hemp milk (either homemade or from Pacific Naturals), or a mild-flavored nut milk such as macadamia nut or cashew nut milk. Note: nut milks can be made using a high-speed blender.
  • Experiment with different types of fruit! Certain fruits such as mango, peach and banana take on an ice cream-like creamy consistency when frozen.
  • Try adding superfood boosters! A bit of raw cacao nibs, gogi berries or gogi powder, chia seeds, acai powder, or pomegranate powder,  make deliciously nutritious popsicle add-ins.
  • If you have a high-speed blender, then try sweetening with dates or prunes instead of added sugar or syrups. Dates in particular add considerable sweetness when mixed with liquid. Note: the recipe below for Berry Blast Popsicles is sweetened only with natural “whole” fruits and contains zero added sugar.

Note: If you have a Zoku Quick Pop popsicle maker, or another popsicle maker, you can make these popsicles two-toned (follow the instructions that come with the Zoku maker for how to make 2-toned popsicles), otherwise just make 3 all-strawberry and 3 all-blueberry pops.

Ingredients

Strawberry Popsicles

  • 1 banana, sliced
  • ¾ cup frozen organic strawberries
  • 5 pitted dates
  • ¼ cup raw cashew nuts (preferably soaked in water for 12 hours)
  • ¼ teaspoon pure vanilla extract
  • 2 tablespoons fresh lemon juice
  • ½ cup water

Instructions

Strawberry Popsicles:

Place all ingredients in a high speed blender, and process until smooth and creamy. Pour mixture into popsicle molds and freeze.
