This Salad with Mushrooms Recipe is the perfect go-to for a quick and fresh salad. Bursting with savory and tangy flavors, and free of gluten, dairy, refined-sugar, and unhealthy oils, this is a recipe everyone can enjoy together!

While you can make this salad with whatever mushrooms you prefer, we boosted the nutrition in this recipe by opting for shiitake mushrooms (our absolute favorite)!

All About Shiitake Mushrooms

When it comes to health-promoting benefits not all mushrooms are equal. If you are going after strictly therapeutic benefits you’ll want to skip over the cultivated white or “button” mushrooms. Instead, go for the more exotic ones!

The reason you should opt for exotic mushrooms is (although you can’t eat all exotic mushrooms) because these are the ones with the most healing properties. Shiitake is the variety I use most often, because it is the easiest to find, and tastes amazing!

Health Benefits of Shiitake Mushrooms

Shiitake mushrooms have potent antiviral and anticancer benefits. They also contain a substance called eritadenine. This encourages the absorption of cholesterol, and lowers the amount of cholesterol circulating in the blood. They’re also high in potassium, and can help to boost the immune system, among many more benefits!

How to Cook Shiitake Mushrooms

My favorite way to cook shiitake mushrooms happens to be the easiest too!

Wash and Dry: Begin by washing the mushrooms. Use a paper towel to pat until dry. Ensure mushrooms are fully dry, as this will help the oil and spices stick to the mushrooms instead of sliding off.

Cut into Pieces: There are many ways you can cut and slice your mushrooms. If I have the time, my favorite way to prepare my mushrooms is by slicing into thin slices with a sharp knife. I prefer this method, simply because I like the texture of thinner mushrooms. If I’m in a rush, I use kitchen shears to cut the mushrooms into bite-sized pieces.

Heat and Sauté: Heat a bit of extra virgin olive oil or avocado oil in a non-toxic skillet on medium heat. Once hot, lightly sauté the mushrooms until tender. Remove from heat.

Spice it Up!: Season with salt and any other preferred spices to taste. Enjoy mushrooms in whatever recipe you please!

Tahini Salad Dressing

If you’ve never had tahini before, it has an earthy and nutty flavor that is delicious in both savory and sweet recipes! While some people prefer one over the other, if this is your first time trying tahini, we encourage you to try unhulled tahini. Hulled tahini can have an overpowering and bitter flavor that is simply not for everyone. Save hulled tahini for later time, and choose your favorite then!

Health Benefits of Tahini

Not only does tahini make a delicious base for salad dressing, but I use it for its health benefits too.

Whole, plant-based fats such as raw nuts, raw seeds, raw nut butters, raw seed butters (such as tahini!), avocados, coconuts, etc. are healthier than “oil-only” based dressings. Incorporating these delicious “whole food” ingredients into your salad dressing recipes can easily pump up the flavor and the nutrition in your salad!

How to Store Tahini Dressing

The tahini salad dressing can be stored in a covered container like a mason jar in the refrigerator for up to four days. Because of this, it is a wonderful dressing to make ahead.

Tangy Tahini Dressing

Instructions

Salad with Mushrooms

  1. Begin by washing shiitake mushrooms and arugula, and patting dry. Place arugula in a large bowl, and set mushrooms to the side for later.
  2. Heat a skillet on medium heat with enough avocado oil to cover the bottom in a light layer.
  3. Slice or cut mushrooms into small pieces, and add to skillet.
  4. Saute for 3-5 minutes, or until tender and slightly crisp. Add to arugula. 
  5. Boil eggs, peel, and slice. Place on salad. Add to salad.
  6. Toast gluten free bread, and cut or tear into crouton-sized pieces. Place on salad. 
  7. Toss salad until well combined, and drizzle with Tangy Tahini Dressing (instructions found below). Enjoy! 

Tangy Tahini Dressing

  1. Place all ingredients in a high-speed blender, like the Luvele Vibe and process until smooth and creamy
