There’s plenty of sweet treat recipes out there for Halloween and fall time, but not nearly enough savory! This is of course due to the fact that when most people think of Halloween and fall, the first things that comes to mind are candy, pumpkin spice, and apple everything! However, what most people don’t realize is that pumpkin is delicious both sweet and savory. Don’t get me wrong, I am ALL about the sweet pumpkin spice hype. But with all of the pumpkin spice latte and dessert craze, the versatility of pumpkin is often overlooked. It really is the perfect neutral base!

In order to make this Simple Recipe for Deviled Eggs with Pumpkin even more festive for fall, we dusted the top with turmeric (feel free to mix a little bit into the filling for more vibrant orange coloring”, and added a tiny pumpkin stem from a sprig of fresh herbs at the top. Delicious, and perfectly themed!

How to Make Deviled Eggs Creamy

Deviled eggs stand out from simple hard boiled eggs, because the filling is smooth, creamy, and spiced to savory perfection! While most recipes use mayo to achieve that creamy texture (not necessarily unhealthy if homemade or if it contains only clean ingredients), we chose a different route for this recipe. In our Simple Recipe for Deviled Eggs with Pumpkin, we used a blend of cashews and pumpkin purée instead. Cashews are an excellent option for adding a creamy consistency to soups, sauces, fillings, and more! Pumpkin is mixed into this recipe for a muted sweet flavor, and also adds to the creamy texture of the filling.

Just like any food, the quality of eggs you buy is incredibly instrumental in determining the amount and type of nutrients you will reap.

For the absolute healthiest and cleanest deviled eggs, be sure to look for organic, pastured eggs, which are not at all the same as “free range”, “cage free”, or simply “organic”. While these labels may sound great and promising, they’re quite deceiving in their actual definitions.

Free Range Eggs

Free range eggs allow much room for personal discretion of the farmers. This label simply indicates that the chickens have access to the outdoors, although the type of outdoor space is completely up to the farmer, and chickens may or may not ever venture outdoors. In essence, eggs from “free range” chickens could roam on a totally grass-free surface (porches, concrete, gravel, etc) and legally use the term. Quite unregulated and vague, free range eggs are somewhat of a hoax.

Cage Free Eggs

Cage free, another vague term simply means that chickens should live in a “cage-free” environment, that could be substituted for any sort of area (building, room, etc.). In addition, they should have unlimited access to food, water, and free roaming within this space during their laying cycle. All-in-all, while cage free chickens are technically in cages, they most definitely are not out roaming green pastures and eating worms like nature intended.

Organic Eggs

Organic eggs sound promising, as we all know avoiding synthetic pesticides and preservatives are most definitely an upgraded for our health. However, organic simply means that the chickens were fed organic feed. And while this is technically better than the alternative, it has absolutely nothing to do with how the chickens are housed, treated, or even exactly what type of food they’re eating.

Pastured Eggs

Instead of looking for eggs that come from “free range”, “cage free”, or “organic” birds, you want to look for birds raised the good old-fashioned way; outdoors on fresh pasture. While pastured chickens are not USDA regulated, pasture raised chicken are raised at the very least part of their lives outdoors on an actual pasture. They have access to grass, and all creatures and food they may find within that pasture. They’re also provided shelter whenever they need or would like to go back indoors. Pastured chickens live about as close to a natural life as it gets with mass production, and without raising them yourself.

Why Does the Type of Eggs you Buy Matter?

The eggs we buy, much like any type of food we buy matters for a variety of reasons. Not only do we want to support farmers that are providing their chickens with happy, stress-free lives, but it also matters for our own health.

The pastured eggs will not only be more nutritious and have more antioxidants, they will also have considerably more anti-inflammatory omega-3 fats and much less pro-inflammatory omega-6 fats.

Buy pastured whenever possible, and even better, buy local and pastured if this is an option!

Ingredients

  • 8 organic pastured hardboiled eggs
  • 1/2 cup pumpkin puree
  • 2/3 cup raw cashews
  • 2/3 cup water minus 3 tablespoons
  • 1/2 teaspoon unrefined sea salt
  • 1 1/2 teaspoon dried sage
  • Turmeric, for dusting (can also blend into mix for a deeper orange color)
  • Fresh herb for the “stems” (I used thyme)

Instructions

  1. Peel the hardboiled eggs and carefully slice each one in half lengthwise. Use a small spoon to remove the yolks.
  2. Set the hardboiled egg white halves aside and transfer the yolks to a high speed blender.
  3. Add the remaining ingredients to the blender. Process on high until smooth and creamy.
  4. Fill each hardboiled egg white half with the pumpkin mixture.
  5. Dust the fillings only with turmeric.
  6. Add the herb leafs for pumpkin “stems”.
